Why we do gluten-free
Gluten is most often found in wheat, so we don’t use wheat or any wheat by-products. Eating gluten can cause inflammation if you have an allergy or sensitivity, and we’ve noticed a lot of people do, so we committed to a gluten-free kitchen to not exclude anyone.
Gluten-free isn’t a trend or a gimmick to us. It’s a different approach to baking and cooking. We’re not here to make our food taste like wheat-based food, we’re here to make tasty pastries and delicious food that bring a smile to your face.
Our gluten-free kitchen
We don’t allow any gluten in our kitchen. We stone mill organic basmati brown rice, organic sorghum and organic white rice to skip wheat flour in our recipes, and we make almond flour, chickpea flour and other alternatives too.
Any oats, nuts or other ingredients we buy are always Certified Gluten-Free, to give anyone with a sensitivity peace of mind.
What is gluten, exactly?
Gluten is a protein composite found in wheat, rye, barley and triticale (a cross between wheat and rye). It helps foods keep their shape, acting as a glue that holds food together. Quite a few people have an autoimmune reaction to it (celiac disease) and many others have a severe sensitivity. It can be harsh on the stomach and hard to digest, which is why a heavy gluten meal can leave you feeling heavy or lethargic.
